Hi Jan,
When no points are selected, use the Shape Selection tool to click the anchor point you want to select (or drag a small window around the anchor point you want to select).
If you accidentally select more than one anchor point, hold down the Shift key and use the Shape Selection tool to click the anchor points you want to deselect (or hold down the Shift key and drag a window around each anchor point you want to deselect).
If all anchor points are selected, use the Shape Selection tool to click outside the Shape, then click the anchor point you want to select (or drag a window around the anchor point you want to select).
TIP:
It's easier to edit Shapes if you have Big Handles enabled. To do that, go to Preferences > Shapes and check the Big Handles box.
